Banana Chia Pancakes! I made these this morning and they were delicious & super tasty. Here's the recipe:
1 banana
1 egg
1 tbsp of chia seeds
1 tbsp coconut oil
Handful of blueberries
1. Mash the banana in a bowl, add the egg, chia seeds and whisk together.
2. Heat pan with coconut oil (or preferred oil of choice) to medium heat. Place 1/4 to 1/2 of the batter into pan. Flip when light brown. Serve with blueberries or desired fruit. (I use Agave Nectar in Maple Syrup. It's a much healthier alternative to regular maple syrup). Enjoy!

Organic Power Chicken Bowl
Made my honey and I an Organic Power Chicken Bowl tonight loaded with chopped chicken, quinoa, kale, broccoli, carrots, black beans and tomatoes topped with fresh avocado! It was superb. Recipe:
Ingredients:
1 pkg of organic boneless chicken breasts
1 cup organic quinoa (dried)
1 pkg Organic broccoli
1-2 Organic carrots
1-2 cups of chopped/shredded kale
Garlic powder
Chicken seasoning
Paprika
Onion Powder
Crushed red pepper
2 lemons
1 can organic black beans (drained)
1 can tomatoes with diced chilies and peppers (drained)
Directions:
1. Cook chicken breasts (on grill or on skillet) and season with garlic powder & chicken seasoning
2. While the chicken is cooking make the quinoa according to the pkg's instructions. (I always have 1 cup cooked and stored in the fridge for whenever I need it)
3. While everything is cooking I use this time to wash and chop my broccoli, carrots & kale.
4. Once the chicken is done, chop it up and toss it in a ziplock bag along with the paprika, onion powder, crushed red pepper and lemon juice. Seal the bag and use your magical fingers to get all the seasoning evenly throughout the chicken (this part was my baby's job lol)
5. While my boyfriend is massaging the chicken, lol, I throw in a little bit of olive oil into the same pan I cooked the chicken, and toss in the chopped up carrots and kale. I like the carrots to have a slight crisp so I keep stirring it all up for about 3-4 mins.
6. Once the quinoa is done, I add the black beans, canned tomatoes, broccoli, carrots, kale and chicken. Give it a few big stirs (my muscles were burning after this step), place lid on saucepan and let the flavors marry each other for about 3-5 mins. Add a few slices of avocado to each bowl you're serving.
Bon appetit! Xo

Motivated to Change!
This picture was taken back in 2008, when I first moved to Las Vegas. It was a time in my life when I was going through a tough breakup but also the best shape of my life! Fast forward 5 years and like most people, life can get in the way and we all get burnt out from working out at the gym. I started to think there was more to life then spending 2 hours each day at the gym.
Today, I have that motivation to kick start my weight loss. I've gained about 12 lbs, which I know isn't much, but on a 4'10" frame, it's a lot more noticeable. This time around I'm finding that outdoor activities and fun DVD fitness programs is what I most enjoy. Here is a #tbt pic of me back in the day.

What is Carb Cycling?
What is Carb Cycling?
Why are people so afraid of carbs? It's an urban myth! Carbs are your friends and your body needs them. They are the preferred source of fuel for our muscles and organs. Truthfully, when I used to think of carbs, pasta and bread would come to mind, but if you take a step back and do a little research you'll find that carbs have been in front of your face all a long and you may not have realized they come in all forms. Take for example.....fruit! Yes, I said fruit. Certain fruits can be high in sugar but if you portion size it right, they are loaded with nutrients. A few more forms of carbs are vegetables, grains and legumes. Healthy carbs are crucial for burning calories and since they break down more slowly than those of cake and doughnuts, they keep your blood sugar and energy levels steady and they also keep your calorie burning furnace hot so it burns more calories.
Now I'm not going to sit here and act like I'm a professional about weight loss and know exactly what to eat. I'm just like you...well almost all of you. I go through the daily struggles of trying to lose a few pounds here and there. I was inspired to get healthy from the show Extreme Weight Loss and wanted to know what Chris Powell (creator of the show and mentor) taught his clients. First and foremost he asks his clients if they're ready for the transformation of their life. It's not just a phase, it's a lifestyle.....and POOF, that's how carb cycling was born (to me). I started to do research on what foods to eat but not only that, I wanted to know how to make them so they're fun and not boring or lacking flavor. I give all credit to Chris Powell and a lot of what I'm writing to you comes straight from him.
Soooooo, ok...what is Carb Cycling you ask? It's an eating plan with alternating high-carb and low-carb days. Once you get the hang of it, it begins to get quite simple. Depending on which cycle you chose, you will have a built-in reward day or reward meal (depending on which cycle you choose), so you can eat healthy, still eat your favorite foods and lose weight!
Each plan has a different mix of high and low-carb days each working basically the same:
- Eat 5 meals - no more, no less.
- Eat a high-carb breakfast that includes both protein and carbs. within 30 minutes of waking
- Eat your remaining 4 meals - either high-carb or low-carb, depending on the plan you're following - every 3 hours
- Choose approved foods (If you want the list just email me)
- Drink a gallon of h20 daily
On my high-carbs days each meal consists of a protein, carbs and veggies. On my low-carb days my breakfast will be high-carb hence a protein, carbs and veggies but the remaining 4 meals will be a protein, veggies and 1 portion of a healthy fat. Let's not forget that you must eat every 3 hours. It takes some getting used to but once you get the hang of it, it gets easy.
If you're like me, you still have tons of questions and concerns. If you're interested in learning more, I encourage you to buy Chris Powell's book. I bought it on Amazon for my Kindle on my Ipad Mini. You're going to need his book to follow his 9 minute Mission workouts. His book is packed with amazing information along with tons of different workouts and recipes.
Click here to purchase his book now. Good luck and enjoy!
